Ingredients:

  • 1 pound chicken cutlets 
  • ¼ cup almond flour
  • ¼ cup freshly grated Parmesan cheese
  • 1 ½ tbsp olive oil
  • 4 tbsp butter, melted 
  • 2 garlic cloves, peeled and finely minced
  • ¾ cup white wine or chicken stock 
  • 2 tbsp lemon juice 
  • 1 large lemon, sliced
  • 3 tbsp capers, drained
  • salt and black pepper to taste
  • 2 tbsp chopped parsley 
  • salt and black pepper

Directions:


  • Preheat oven to 400ºF. 
  • Season the chicken with salt and black pepper. 
  • In a shallow plate combine the almond flour and grated Parmesan cheese
  • Dredge each chicken piece in the Parmesan mixture. 
  • Grease a baking sheet with olive oil. 
  • Arrange the chicken on the baking sheet
  • Top with lemon slices and drizzle with melted butter. 
  • Bake in preheated oven for 10 minutes. 
  • In a small bowl combine the lemon juice, white wine and cappers. 
  • Season to taste with salt and black pepper. 
  • Pour the white wine mixture over the chicken and bake for 15-20 minutes. 
  • Sprinkle with chopped parsley and serve.
