 Keto Black Forest Cake


The second recipe of our Keto & Collaborative Advent Calendar is proposed by Susan, whom you can find on Instagram: @susansabitan and whom I had the pleasure of meeting during a visit to Nancy. She was just discovering the ketogenic diet… and today, after only a few months,

she gives us a magnificent festive dessert!

Ingredients

For the dough

4 eggs

120 grams Almond powder (here, whole almond powder)

40 grams Erythritol (or other sweetener to be dosed according to your tastes)

20 grams Unsweetened defatted cocoa powder (Van Houten type)

2 tbsp. baking powder

For garnish

2 Bricks Semi-thick crème fraiche

80 grams Dark Chocolate minimum 85% cocoa

vanilla extract

100 g candied cherries



Instructions

Mix the dry ingredients then add the eggs until you get a smooth paste.

Pour the batter into a suitable mold (glass or ceramic) and cook in the microwave for about 4 minutes at full power.

Turn out onto a rack to cool. Cut the edges to form a nice cylinder then slice it into 3 discs of equal size

Beat the previously cooled cream to make Chantilly. Separate the cream into two equal parts, and incorporate the melted dark chocolate into the first.

Perfume the second part with vanilla extract, and set aside in the fridge.

If you are not on strict keto, you can soak the sponge cake discs with maraschino or cherry syrup. You can also use a little red fruit infusion that you have left to cool to avoid increasing the carbohydrate content.

On the first disk, place a good layer of chocolate whipped cream. Add the candied cherries cut in 2 or 4 and cover with the second disc of sponge cake. On the second disc, place the plain whipped cream and the rest of the cherries. Close with the last disc.

Use the rest of the whipped cream to cover the entire cake, and then the decoration depends on your imagination: grated chocolate, cherries, crushed hazelnuts, it's up to you!


Put your Keto Black Forest back in the fridge at least 2 hours before serving it.

but it will allow you to share a fabulous dessert with your guests from time to time!
